Keto Chicken Curry in a Hurry!

We're lovin' a great curry, and this recipe serves up a delicious curry for getting those Keto Gains! Wow, so Delicious! It's on page 93 of The Keto High Fiber Cookbook by Dr. Thomas Kurscheid. You can purchase the cookbook here!!

The recipe starts with coconut oil melted in a pan or wok, and then the chicken strips are browned. Mmmm!!! The chicken is placed in a bowl and set aside.

Add more coconut oil to the pan, and then add the broccoli florets. After a minute, you put the tomato paste, and curry paste in the pan to roast for a bit. Next, add the broth and mix with the broccoli, curry and tomato. Cook the broccoli until done. While the broccoli is cooking, toast the coconut in a separate pan until brown. Finally stir the chicken and cream cheese into the pan, and mix well. Serve with a garnish of cilantro and toasted coconut. Yum!


Ingredients

  • 5 tsp cold-pressed coconut oil

  • 3 1/2 oz of chicken breasts, but into strips

  • Salt

  • 1 head broccoli florets

  • 2 tsp tomato paste

  • 1 tsp Thai red curry paste

  • 1/2 cup vegetable or chicken broth

  • 3 1/2 tblsp full-fat cream cheese

  • 1 tblsp unsweetened shredded coconut

  • 1 tblsp coarsely chopped roasted and salted peanuts (optional)

  • 1/2 bunch fresh cilantro, leaves and stems chopped

Recipe

  1. Heat 2 tsp of coconut oil in a wok or saucepan.

  2. Brown the chicken strips on medium high. It should take about 1 1/2 minutes.

  3. Season with salt and move to a separate bowl.

  4. Add 3 tsp of coconut oil to the wok or saucepan.

  5. Fry broccoli florets for 1 minute, then push to the side of the pan.

  6. Add tomato paste and curry paste to the center of the pan, and roast for a few minutes, then add the 1/2 cup of broth.

  7. Mix the broccoli with the sauce and cook over medium heat for 5 minutes.

  8. In a separate pan, roast the coconut until golden brown.

  9. Stir the cream cheese into the broccoli, add the chicken, stir and cook for 2 minutes.

  10. Season with salt.

  11. Spoon the curry into a bowl or plate and serve with the shredded coconut, peanuts, and a sprinkle of cilantro.
