Italian Encrusted Pork Chops
These Pork Chops are a juicy rendition of Chicken Parm. Instead of using Panko bread crumbs, we are excited to show you how to use pork rind crumbs instead. This Zero carb alternative adds tremendous flavor and mimicks the bread crumbs perfectly.

Preheat over to 400 degrees
Cover a baking sheet with foil and spray with cooking spray
Ingredients:
Pork Chops (6)
Pork Rinds crumbs 1/2 cup
Butter (melted) 1 Tbsp
Mustard 2 Tbls
Mayo 1/4 cub
Virgin Olive oil 2 Tbls
Parmesan Cheese 1/4 cup
Italian Cheese 3/4 cup
Garlic 2 cloves
Parsley Flakes 1/2 Tsp
Thyme 1/2 Tsp
Jalepeno Sea Salt to taste
Salt to taste
Pepper to taste
To make the topping:
Grind about 4 cups of Pork Rinds in a blender to make 1/2 cup of crumbs. Place in a small bowl. Mix in the tablespoon of melted butter. Add in the Parmesan and the Italian Cheese. Pour the 2 tablespoons of Olive Oil and place right over the top Add the pressed garlic, parsley, thyme, salt and pepper. Mix together.
Make the pork chops:
Rinse off the pork chops and dry them with paper towels. Place pork chops on the baking sheet. Mix the mayo and mustard together and slather the pork chops with this mixture. Pour a pile of the crumb mixture on each of the pork chops and pat down. You don't need to cover all sides of the pork chops, just the top. Place in the oven for 25 minutes. Enjoy!
